I found a container of unknown contents in the freezer yesterday. Upon defrosting they revealed themselves to be vintage bananas. Cake is the only logical thing to do with old bananas, so this morning that is precisely what I did. It was all going well until half way through the process I realised my fridge was void of eggs. So, in the spirit of ‘fake it ’til you bake it’, I made the recipe up. Lo and behold it turned out beautifully from the dead man’s pan (a story for another day). Tis crispy and crunchy on the outside, moist and spicy on the inside.
