Beetroot’s colour comes from a chemical called betalain. It’s quite good for you and is also responsible for the colour in rainbow chard and rhubarb. Having prepared some delicious homegrown beetroot (thanks Kim!) betalain is also found on my chopping board, knife, tea towel and hands – I’m loving the pink highlights it lends to my life.
