Sherry is a many and varied thing. We tend to think it’s sweet and comes out of a flagon, but in Spain, in Jerez, it is more often than not dry. Oloroso style is aged in oak with lots of oxidative characteristics – think toffee, leather, dried apple, walnut and spices. It’s dry and served lightly chilled and is surprisingly refreshing and full of flavour. Perfect with a wedge of manchego cheese. I was happy to come home with the remains of this bottle after wine school last night.
